Canning Stone Fruit in Simple Syrup


The attendees of the food preservation workshops are encouraged to bring their own fruit for canning. This allows people with limited resources like canner, rack, etc to have a hands on in canning.

At one of the workshop, an attendee brought some plums to can. The plums are simply canned in simple syrup.

In another workshop. another attendee canned some peaches in simple syrup. The process to can stoned fruit in simple syrup is pretty easy.

Ingredients

  • stoned fruit
  • sugar
  • water

Instructions

Prepare canner:

Any large pot can be a canner. Just ensure that the pot is tall enough to hold water at least 2.5cm/1 inch deeper than your tallest jar. Place a cooling rack on the bottom of the pot, to raise the jars off the surface (helps to avoid excessive agitation). You can make a canning rack by tying a few old jar rings together with twist ties or twine. Otherwise, line the bottom of the canner with towels.

Prepare jars:

Wash with hot, soapy water, rinsing well. Inspect jars, and discard any with nicks. chips, or scratches, as these flaws can cause breakage. Set the jars into your canner, fill with water, and bring to simmering. Do not boil. Keep warm until ready to fill.

Prepare lids:

Wash with hot, soapy water, rinsing well. Heat the seals in hot, not boiling water, for 5 minutes. Rings do not need to be heated. When using, remove, remove lids from hot water using a non-metallic device, rubber gloves, or a magnetic stick. Avoid using any tools which may scratch or nick the sealing compound or the inside liner of the lid.

Canning-Stone-Fruit-2Place the fruit in boiling water for 20 to 30 seconds and plunge them in icy cold water. The skin should comes off easily. Cut the fruit into quarters if needed.
Canning-Stone-Fruit-3Place the fruit in the canning jar. Fill the jar with water up to the rim, leaving 1/4 inch of headspace. Pour the water out to a measuring cup to measure the volume. This step is to determine how much sugar is needed.
Canning-Stone-Fruit-4The amount of sugar needed is 1 to 4 ratio of the water. Add the sugar to the jar and fill it with water leaving 1/4 inch of head space.

The sugar will dissolve during the canning process to form a simple syrup. According to Ian, this is called the lazy man method.

The Canning Process:

Remove air bubbles with a none metallic spatula and adjust head space, if necessary. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to finger-tip tight.

Place jars in canner, ensuring they are completely covered with water. Bring to boil and process for the time needed depending on the size of the jar. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.
